These star anise pods grow semi-wild in northeastern Vietnam. Highly aromatic, they are used sparingly in both savory dishes and desserts.

Although it contains essential oils similar to those in anise seeds, star anise has a much more intense flavor. Its sweet, licorice-like flavor is more pronounced, which is why it is used in small quantities. In Vietnamese and Chinese cuisine, it adds flavor to braised meat dishes and broths. It is also found in Chinese five-spice powder. It pairs particularly well with pork, beef, and duck. Combined with a little mandarin peel and fennel, it adds wonderful flavor to roast pork or pork ribs.
