The term “curry” was coined by the British to refer to the variety of fragrant spices used in Indian cuisine. In traditional Indian cooking, spice blends, called “masalas,” are prepared at home. Many of them are mixed with a liquid, such as water or vinegar, to create a paste or curry sauce. However, fresh ingredients and pastes did not travel well.
