Labrador tea (Ledum groelandicum) is one of them (and despite its name, we do harvest it here in the Gaspé Peninsula!).

This medium-sized shrub (30 to 120 cm) is found primarily in boreal or arctic climates.

Only the youngest leaves are harvested, by hand.

An infusion made with a few leaves develops a blend of diverse aromas, such as resin, mint, tarragon, and grapefruit.

You can reuse the leaves a second time!

You can also prepare a marinade made with Labrador tea and let your game meat soak in it…
